Land & Pasture Requirements
The standard guideline is 1–2 acres per animal unit, but actual carrying capacity depends entirely on forage quality, rainfall, and management. Rotational grazing — moving cattle through 3–6 paddocks on a 21–28 day rest cycle — can double effective carrying capacity while improving soil health. Year-round water capable of supplying 30–50 gallons per animal per day is non-negotiable.
Choosing a Breed
Angus dominates commercial beef: exceptional marbling, rapid weight gain, strong maternal instinct, adaptable to virtually every US climate. Hereford cattle are the beginner's best friend — docile, good on grass without supplemental grain. Dexter cattle are the homestead specialist: a miniature Irish breed (600–800 lbs mature) that produces full-flavored beef on just 1/2–1 acre per animal. For hot, humid climates, Brahman crosses offer heat tolerance and fly resistance.
Fencing Systems
High-tensile electric fence (2–5 strands of 12.5-gauge wire at 4,000+ volts) is the modern standard: 30–50% cheaper than barbed wire, lasts 20+ years, and moveable for rotational systems. A well-maintained H-brace corner post assembly is critical — corners carry the load for the entire fence run. Barbed wire (5-strand) remains common and effective without electricity. For containment near roads, use woven wire topped with electric.
Feeding, Nutrition & Finishing
Grass-fed production takes longer (24–30 months) but produces nutritionally superior beef. Year-round grass access requires 25–30 lbs of hay per animal per day in winter. Grain finishing: 4–6 months of corn or barley (10–20 lbs/day) before slaughter produces well-marbled beef faster. All cattle need free-choice trace mineral salt. In selenium-deficient regions, supplement with selenium-fortified minerals — deficiency causes white muscle disease in calves.
Health Management
A basic program: annual 7-way clostridial vaccine + IBR/BVD respiratory vaccine, annual pour-on dewormer in fall, fly control in summer, and hoof trimming for confinement cattle. Take a rectal temperature (101–102.5°F is normal) as your baseline. Common issues: Bloat — walk the animal immediately; Pinkeye — Vetericyn spray twice daily; Foot rot — penicillin, clean the foot. Develop a relationship with a large-animal vet before you need one.
Processing & Yields
A finished steer at 1,100–1,200 lbs live yields approximately 700 lbs hanging weight and roughly 450–500 lbs of packaged beef. Custom-exempt processing for personal use costs $0.50–0.75/lb hanging weight. Typical cuts: 100+ lbs ground beef, 50–60 lbs steaks, 40–50 lbs roasts, 30+ lbs stew meat, plus short ribs, brisket, bones, and organ meats.
